Sarshadong Isda

Ingredients:
Fish (Talakitok, Pompano or Tuna)
Garlic
Onions
Tomatoes (lots of tomatoes to make the sauce)
Fish Sauce
Salt
Pepper
Eggs (optional)
Water (1 & 1/2 cup)

Procedure:
1. Fry the fish (seasoned with salt)
2. Sauté garlic, Onions and Tomatoes
3. Put fish sauce, salt and pepper, adjust according to taste
4. Add water and simmer until everything comes together fully cooked
5. Put the fried fish, simmer
6. Beat eggs then put on top.

Chicken with Pickles

Ingredients:

2 lbs. Chicken
1 pc. Chorizo de Bilbao
1 pc. Chorizo de Macao
½ lb. Sausage
½ can pickles
1 small can liver spread
cheese
2 tbspoon soy sauce
salt
2 cloves garlic
1 medium size onion
1 can tomato sauce

Procedure:


Clean chicken thourougly. Marinade with soy sauce. Add the chorizo, sausage, cheese and pickles. Add salt. Sautee garlic, onion and tomato sauce. Put the marinated chicken and cover until chicken is tender. Add the liver spread and salt to taste.

Spaghetti

Ingredients:
1. ground beef - 1 lb
2. hotdog or kielbasa - 1 bag regular size purefood hotdogs
3. tomato sauce - 1 can
4. carrots - 2 pcs
5. green and red bell peppers
6. pickle relish - 2 tbsp
7. grated cheese - for marinating and topping
8. ketchup - papa brand 3 bottles
9. chopped onions
10. minced garlic
11. soy sauce
12. black pepper
13. a squeeze of calamansi or lemon

Procedure:
1. Marinate ground beef with soy sauce, black pepper and calamansi.
2. Put carrots, bell pepper, hotdog, relish, celery and cheese. Marinate.
3. Saute garlic and onions, put marinated beef until cooked.
4. Put tomato sauce and ketchup.
5. Cover until cooked.

Mechado

Ingredients:

1. beef - 2 lbs
2. pork belly - 2 lbs
3. celery - 2 stalks
4. pickle relish - 2 tbs
5. grated cheese - 1/2 cup
6. potatoes - 1/2 lbs
7. green and red bell pepper
8. tomato sauce - 1 small can
9. black pepper
10. garlic
11. onion
12. soy sauce
13. calamansi or lemon

Procedure:
1. Cube beef and pork in big chunks.
2. Put soy sauce, calamansi and black pepper.
3. Put relish, cheese and celery.
4. Marinade for a while.
5. Saute garlic and onion, then put tomato sauce.
7. Put in all the marinated mixture, cover until meat is tender.
8. Season with salt.
9. Put potatoes until cooked.
10. Put bell pepper.

Menudo a la Marcela

Ingredients:

1. pork - 2 lbs
2. pork liver - 1/2 lb
3. sausage - 1/2 lb
4. pickle relish - 2 tbs
5. grated cheese - 1/4 cup
6. raisins - 1 small box
7. garbanzo - 1 can
8. potatoes - 1/2 lb
9. celery - 1 stalk
10. tomato sauce - 1 small can
11. garlic - 2 clove
12. onion - 1 medium
13. soy sauce
14. calamansi or lemon

Procedure:
1. Cube pork and liver.
2. Put soy sauce and calamansi.  Put pickles and grated cheese.
3. Mix chopped sausage.
4. Mince celery and mix.
5. Set aside for a while.
6. Saute garlic and onion, then put tomato sauce.
7. Put in all the marinated mixture, cover until pork is tender.
8. Season with salt.
9. Put potatoes, garbanzos and raisins until cooked.

Leche Flan

Ingredients:
1. Chicken Eggs - 25 pcs.
2. Condensed Milk - 3 cans
3. Evaporated Milk - 3 cans
4. Refined white sugar - 1 kg.
5. Brown cane sugar - 1 kg.
6. Vanilla
7. Lemon (1/4 of a lemon)
8. half-a-teaspoon of salt

Procedure:
1. Beat eggs (whole including white) 3 or 4 eggs at a time by hand.  Beat it well to make sure of runny consistency.  For this recipe with white of the eggs, need to beat the eggs thoroughly for smooth texture.  Then strain before putting in a big mixing bowl.
2. Pour condensed milk and evaporated milk.  Stirring in while pouring milk.
3. Mix refined white sugar slowly while stirring the mixture.  Mix for a long time to make sure that all sugar have disolved.
4. Mix lemon and half teaspoon of salt. Pour to mixture.
5. Heat up in a small saucepan brown cane sugar mixed with a little bit of water. Wait till it is completely melt to form a caramel. Do not scald.
6. Coat pyrex dish or llanera with the caramel.
7. Pour in egg and milk mixture.
8. If steam - cooking time is about 20~30 minutes. Make sure to open the lid of the steamer every 3-4 minutes just so that there are no bubbles formed in the flan.
9. If oven - put llaneras in a pan of water. Bake for 325F for 20 mins, then at 350F for another 25 mins.
10. To check if cooked, test with a toothpick, if toothpick came out clean, then it's cooked.
