Ingredients:1. Chicken Eggs - 25 pcs.
2. Condensed Milk - 3 cans
3. Evaporated Milk - 3 cans
4. Refined white sugar - 1 kg.
5. Brown cane sugar - 1 kg.
6. Vanilla
7. Lemon (1/4 of a lemon)
8. half-a-teaspoon of salt
Procedure:1. Beat eggs (whole including white) 3 or 4 eggs at a time by hand. Beat it well to make sure of runny consistency. For this recipe with white of the eggs, need to beat the eggs thoroughly for smooth texture. Then strain before putting in a big mixing bowl.
2. Pour condensed milk and evaporated milk. Stirring in while pouring milk.
3. Mix refined white sugar slowly while stirring the mixture. Mix for a long time to make sure that all sugar have disolved.
4. Mix lemon and half teaspoon of salt. Pour to mixture.
5. Heat up in a small saucepan brown cane sugar mixed with a little bit of water. Wait till it is completely melt to form a caramel. Do not scald.
6. Coat pyrex dish or llanera with the caramel.
7. Pour in egg and milk mixture.
8. If steam - cooking time is about 20~30 minutes. Make sure to open the lid of the steamer every 3-4 minutes just so that there are no bubbles formed in the flan.
9. If oven - put llaneras in a pan of water. Bake for 325F for 20 mins, then at 350F for another 25 mins.
10. To check if cooked, test with a toothpick, if toothpick came out clean, then it's cooked.
